During a winter day in the ancient hyrcanian forests of Iran we woke up with the magical birds singing, made the lovely Korsi ready and started  baking a delicious pear galette.

The description looks a bit long however if you have all the ingredients in hand it’s a very quick and joyful pastry to make at home

Recipe:

  • Wheat flour 520g
  • Butter 250g
  • Brown sugar 105g
  • Cold water 240g
  • Pear (you can use apple) 4 medium
  • Egg and saffron on top is optional but we highly recommend it,
  • Egg yolk 1
  • Saffron 0.2g/ a pinch

•  First slice the pears thinly and then bloom a pinch of saffron (If your saffron is not dry enough, hit it a bet to dry. You can also add a bit of sugar to bloom it easier)

•  Add hot water on saffron and leave it to give the color completely

•  Add cinnamon and brown sugar to sliced pears

•  Mix your egg yolk and saffron ,and stir it well

•  Cut the cold butter in to cubes then mix in your flour, brown sugar and a teaspoon of salt

• Stir while adding cold water(Depending on your flour, you might need a bit less/more water so adjust according to the consistency of your dough)

•  Knead the dough for a minute, making sure the butter does not melt, start rolling the dough thickly.

•  Cover the dough with pears and put the nuts on them .

•  Keep the edges of the galette empty and fold the sides towards the middle. Then using your egg and saffron mixture egg wash the sides. Leave it in fridge for 30 minutes.

• Preheat oven to 180°C .

•  Once your oven has came to the temperature, put your galette in the oven. Ours was ready in one hour. Depending on your oven it might need 15mins less or more.
